Rich Pound Cake



Ingredients 1 1/2 cups unsalted butter softened and cut into 1/2 inch pieces

1 pound confectioners' sugar

6 eggs

1 teaspoon pure vanilla extract

2 3/4 cups sifted cake flour

Preparation

Preheat the oven to 300 degree. Grease the flour a 10 inch tube pan and set aside.

In a large bowl, cream the butter and gradually beat in the eggs and confectioners' sugar until light and fluffy. Then beat in the vanilla.

With the mixer on low speed, gradually add the flour, beating just until mixed.

Pour the batter into the prepared pan, and bake for 1 1/2 hours.

Cool the cake in the pan for about 10 minutes. Once cooled invert the cake into a wire rack to cool completely.
